Each cocoa pod contains about 24 cocoa beans.
A cocoa tree can produce between 60 to 80 pods. Pollination of the tree can yield more pods. In Ghana, we harvest twice yearly because the soil is very fertile.
The cocoa pods are harvested, the beans removed and then fermented in the forest with natural sunlight. The process of fermentation takes about two weeks during which the beans are dried, and the moisture of the beans is reduced giving us the flavor and aroma we all love.
During the drying process, the white protective covering of the bean falls off, and the beans change their color to the color you see in the pictures. This natural sun light drying is better than drying artificially by machine. Our sunlight drying enhances the flavor and richness of Ghanaian cocoa.
With the completion of the drying, the beans are then grinded into our all natural CocoaThrill powder which creates all these delicious goodies!
